Broccolini with Marinated Goats Feta

Broccolini – the trim, statuesque cousin to the bloated broccoli – is the star of this ridiculously quick and easy side dish. Lifted to never-before-seen-heights by our unctuous Monjay Mezza Marinated Goats Feta, never again will you hear the words, “I don’t like greens”.

How to Prepare

Trim the stalks and wash the broccolini, then place in a saucepan with a centimetre’s depth of cold water. Sprinkle over salt. Place over a medium heat, bring to a simmer and cook until there’s still a bit of bite to the stalks. Drain and squeeze the lemon over to inhibit oxidation. Season to taste.

While the broccolini are having a steam, dry roast the almonds in a pan over medium heat until they begin to brown. Alternatively, use the grill, but be warned: almonds go from nicely browned to fossilised in three quarters of a second.

Arrange the broccolini on a shallow dish and spoon dollops of our creamy Goats Feta artfully over the top. Scatter the almonds from a height and drizzle it all with olive oil.

This dish loves being eaten with grilled lamb chops or crispy skin salmon.
